      1. Take a saucepan and pour olive oil to heat on medium heat.
      2. Sweat the bell pepper, celery and onions until they get tender.
      3. Spoon garlic powder, flour and salt. Mix well until it smoothens. Make sure lumps are not formed.
      4. Add canned tomatoes and chicken broth and boil it slightly.
      5. Add jalapeno, tomatoes, okra, Tabasco and Emeril’s essence to the mixture.
      6. Allow to cook on medium heat around two hours.
      7. Remove it and serve hot.

      • Celery ( diced) – 2 cups
      • Large onion( chopped) – 1
      • Cube butter – 1
      • Pepper- 1 1/2 tsp

      • Salt – 1/2 tsp
      • Sage – 1 tsp

      1. Allow celery and onion to boil for about 15 minutes or until they get soft.

      • Unsalted Butter – 1/2 stick
      • Turkey- 1
      • Water – 8 pkg
      • Poultry Seasoning( recipe given below) – 1/4 cup
      • Kosher Salt – 1 cup
      • Fresh Rosemary and thyme
      • Bulb Garlic – 1
      • Poultry seasoning :
      • Onion powder – 1 tbsp
      • Seasoned salt – 1 tbsp
      • Dried Sage – 1 tbsp
      • Dried Thyme – 2 tbsp
      • Savory – 2tbsp
      • Garlic Powder – 2 tbsp
      • Paprika – 1 tbsp
      • Marjoram – 2 tbsp

      Method of Preparation:

      1. Take out the giblets from the turkey.
      2. Place the turkey in large container and pour old water in it. Allow the turkey to soak in the brine.
      3. Take 2 quarts of water and dissolve salt in it.
      4. Immerse the turkey in this 2 quarts and leftover 6 quarts of water. If required add some more water to it and allow the turkey to soak overnight or for 8 hours.
      5. Transfer the turkey from brine into a roasting pan. Remove excess brine.
      6. Pat the turkey dry and heat the oven at 350 degrees.
      7. Brush and cover entire turkey from outside with butter. Sprinkle poultry spices.
      8. Place thyme and rosemary into the cavity of turkey.
      9. Slice garlic bulb into two pieces and place one in cavity. Now, cover the turkey with foil and keep to heat in oven.
      10. Allow to cook for 3 to 4 hours. Take out the foil, 30 minutes before the turkey left to cook and allow it to shrink.
      11. After taking out turkey from the oven, tent it slackly with foil and keep it for around 30 minutes before serving.

      • Baby pumpkins – 8 each
      • Onion ( finely chopped)- 1/2 cup
      • Sage leaves( dried) – 1/2 tsp
      • Garlic cloves ( minced) – 2
      • Whole wheat bread crumbs – 1 cup
      • Water or Vegetable stalk – 1/3 cup
      • Pine nuts ( roasted) – 1/4 cup
      • Celery ( finely chopped)- 1/3 cup
      • Soy sauce( low sodium) – 1
      • Apricots ( chopped and dried) – 1/4 cup
      • Thyme- 1/2 tsp
      • Nutritional flakes of yeast ( grated) – 1/2 cup

      Method of Preparation:

      1. Allow the oven to heat till 350 degrees. Cut the pumpkin (about 1/2 inch) from top and scoop out the fibers and seeds and heat the pumpkins for around minutes.
      2. Take a large skillet, heat water or stock on medium heat, until the onion softened. Do not let it brown.
      3. Spoon sage, garlic, bread crumbs and thyme. Heat, stir for 1 minute and remove from heat. Now, add in remaining ingredients and stir well.
      4. Slightly stuff the pumpkins with this mixture. Cook until the stuffing becomes slight brown or heat for 15 minutes. Make sure, not to overcook the pumpkin, otherwise it will spill.
