Ingredients:

  • Easy Pumpkin Pie Mix – 1 can
  • Eggs – 2
  • Evaporated Milk – 1 can
  • Whipped cream
  • Athens Mini Fillo Shells – 2 pkgs
  • Nutmeg

Procedure of preparation

Heat the empty oven to 350 degrees. Blend eggs, evaporated milk and pumpkin pie mix in a bowl. Fill this mixture into fillo shells. Allow it to bake for 14-15 minutes. Refrigerate the mixture until you take it to serve. Garnish these bites with dusting of nutmeg and whipped cream.

Pumpkin Pecan Pie

Ingredients:

  • Small pecan halves ( 1 1/3 cups )
  • Large eggs – 4
  • Butter 1/ 4 cups
  • Sugar 1/2 cups
  • Maple syrup ( 1 cup)
  • Vanilla extract or dark rum ( 1 tablespoon)
  • ‘Jack-Be-Little’ pumpkins – large 8
  1. Make a small circular hole around the stem of the pumpkin and remove the portion. Scrape the seed and fibers with small spoon. Place all the pumpkins with their caps in huge jelly-roll pan; take aside one cup of pecans among this mixture.
  2. Take 1 quart saucepan and melt butter in it. Preheat oven up to 350 degrees. Blend the butter well in the maple syrup. Now, stir this mixture in eggs, rum and sugar very well.
  3. Pour little maple mixture over pumpkin pecans. Place the leftover pecans in pumpkins and pour the maple mixture on its top. Coat the pecans completely with the maple mixture.
  4. Keep these pumpkins in the oven and bake for around 45 minutes. Once it gets set, allow it to cool. Place into serving tray at room temperature.

    • Knox gelatin- 1 envelope
    • Cracker piecrusts (mini graham)- 8
    • Granulated sugar- 1/4 cup

    Procedure of preparation

    1. Take one cup of cold water into a double boiler; drop some gelatin over it; place the piecrusts all over the baking sheet. Stand this for around 3-4 minutes.
    2. Let granulates dissolve entirely by heating the mixture of gelatin. Now, add sugar, spices with pumpkin and heat it, stirring seldom, till the sugar and pumpkin gets melted wholly. Remove this mixture from the heat and keep to get cool for around 30 minutes. .
    3. Take a bowl, blend heavy cream with vodka and 1/4 cup of cold water. Fluff up in the mixture of pumpkin and instantly split it up between the piecrusts. Make it firm by chilling for minimum 4 hours. Slice the pies into blocks and spoon whipped cream for garnishing if required. Now, it’s ready to serve.

    Pumpkin Whoopie pies

    Ingredients:

    • Pumpkin – 2 cups
    • Brown sugar – 2 cups
    • Oil – 1 cup
    • Separated Eggs -2 , whole eggs 2
    • Flour- 2 cups
    • 10x sugar
    • Cloves, ginger, cinnamon, baking soda, baking powder and vanilla each one tablespoon

    Procedure of preparation

    1. Blend cloves, cinnamon, baking soda, salt, ginger, baking powder and flour. Keep this aside. Whisk together oil, vanilla, 2 eggs yolks and pumpkin. Now, keep on adding dry ingredients gradually and whisk it properly.
    2. Drop teaspoonfuls of this mixture onto baking sheet. Allow it to bake for around 15 minutes and then cool it.
    3. For preparing the filler, whisk 2 eggs whites until they are firm. Add flour, vanilla, milk, and whisk well. Add 10x sugar and shortening. To make it fluffier, beat it thoroughly. Sandwich between the cookies.

    Luscious Four-Layer Pumpkin Cake

    Ingredients

    • Yellow cake mix package -1
    • Milk – 1/2 cup
    • Large eggs – 4
    • Pumpkin – 1 can
    • Powdered sugar – 1 cup
    • Oil – 1/3 cup
    • Caramel topping – 1/4 cup
    • Pumpkin pie spice – 1 and half teaspoon
    • PHILADELPHIA Cream Cheese ( soften)- 1 package
    • Chopped PLANTERS Pecans – 1/ 4 cup
    • COOL WHIP Whipped Topping- 1 tub

    Directions

    1. Allow the oven to heat up to 350 degrees. Flour and grease the round cake pan. Whisk the cake mix, oil, milk, 1 cup of pumpkin, 1 tsp. of pumpkin pie spice with an electric mixer in large bowl. Pour this into the pan.
    2. Bake this blend till 30 minutes. Allow it to cool for 10 minutes. Whisk cream cheese with blender on medium speed until it gets creamy. Add remaining pumpkin, pumpkin pie spice and blend well. Stir this mixture in the whipped topping.
    3. Use serrate knife to cut each layer in horizontal half. Pile the layers on a plate and sandwich the creamy cheese. Sprinkle caramel and pecans in the cake and serve it.

    Ingredients for cookies:

    • All purpose flour – 2 cups
    • Baking powder- 1 table spoon
    • Ground cinnamon 1 teaspoon
    • Ground ginger- 1 teaspoon
    • Granulated sugar – 11 /4 cup
    • Baking soda – 1 teaspoon
    • Salt – 1 teaspoon
    • LIBBY’S 100% Pure Pumpkin – 1 cup
    • Large eggs ( lightly whisked) – 2

    Procedure:

    1. Grease the oven lightly. Heat the oven till 350 degrees.
    2. Mix flour, salt, ginger, baking soda, baking powder, and cinnamon in a bowl. Whisk butter and sugar in a mixer at medium speed for around 3 minutes. Beat the mixture and keep on adding eggs. Mix pumpkin and vanilla extract and beat until it smoothens. Add in the flour and blend properly. Drop this mixture on the baking sheets by heaping measuring teaspoons.( 72 cookies are required)
    3. Filling of cream cheese: Whisk butter, cream, vanilla and cheese in a bowl with medium speed until it gets fluffy. Now, beat in powdered sugar slowly to make it fluffy and light.
    4. Sandwich this mixture between two cookies and store these cookies in refrigerator in a covered container.
